Finca Las Palomas is a coffee farm located at 1750m asl close to the village of Tarbaca, in Canton Aserrí of the San José province.

It is managed by the Monge Garcia family: Don Jorge Monge Garbanzo inherited Las Palomas from his parents and led it since 1993 along with his wife.

Las Palomas is a small estate of about four hectares and produces less than 100 bags of coffee a year. It has two full-time employees, which increase to 25 for the harvest.

Given the small size, Las Palomas does not have a mill of its own and uses the nearby Microbeneficio Cerro Dragon to perform washed preparations and parchment removal (hulling). Cerro Dragon is itself a micromill and processes less than five hundred bags of coffee a year.

The microlot named La Maravillia was prepared according to a natural process. The cherries, of the Caturra and Catuai varietals, have been handpicked only when perfectly ripe. They were dried on patios for about seven days during which they were turned around several times a day to promote uniform drying and to avoid unwanted fermentation. Once an 18–20% residual moisture was reached, the cherries were left to rest for a few days and then sent to the mill to remove the parchment.

In the cup, this coffee stands out for its notes of ripe red grapes, dried prunes, brown sugar, along with floral hints. This microlot delivers sweet and luscious cups as espresso.
